I just bought War In The Pacific and it said the version was 1.50. The latest patch is 1.804. Can I just apply this latest patch or do I need to apply all the patches in between (i.e 1.60, 1.80,...)?

Yes 1.8 contains all you need, as the description says it is a comprehensive patch.
