Go to the Campaigns menu and try the Boot Camp series. There are videos to help you learn how to play them here

There are OOB ratings for all the PCO scenarios.

The ratings are:

Ultra High
Very High
High
Medium
Low

The scenarios that have a Low OOB rating are:
6/41 First of Many
6/44 Dangerous Information
1/45 Lake at Lessen
3/45 Tucheband

The scenarios that have a Medium OOB rating are:
7/41 Schlobin - Support the 10th Mot ID
5/42 Taking Hill 226
5/42 The Battle for Veseloe
5/42 Over Open Sights
5/42 Cross at Barenkovo
5/42 Push for the Bereka
5/42 Rear Guard
11/42 Welcome to Kotelnikovo
3/43 Return Road to Kharkov
9/43 Kolomak
5/44 Breakthrough
11/44 Recon Moves Up
1/45 Operation Konrad
3/45 Spring Awakening 1
3/45 Spring Awakening 2
3/45 Golzow

Maybe this will help to choose from some of the many scenarios that are available.

In the bottom right of the scenario selection page is the scenario OOB size and map size indicators. You can use those to determine what size the scenarios are.

Ah! That's what Ultra - Low means.

Any idea how I get my tanks to stay on the road?

It is not as important to stay on roads in PC as it is in other games. Press 5 to see the terrain map and avoid purple spots.

Select the CO unit. Click the gold Path button until Fastest comes up. If the road is faster it will stay on it. Do the same for the rest of the platoon. You can also hold the shift key when clicking the CO unit and it will force the rest of the platoon to take the same setting.

I suggest "Dangerous Information G." Big map, you only get 5 Pumas. It's an "OMG there's one of them!" type games where you sneak/feel around the map and bump into the enemy.

First time I played that one was as Soviets vs the AI. Those Pumas came at me from all different directions. For a big map with a handful of units, it is a good time.

Check the terrain. Use '5' key. Look for any green that covers the road. If it's there the AI will route around it. If not your units shouldn't have any trouble going down the road.
