a) When a unit is ordered to dig in the entrenchment level of a hex is increased in proportion to its engineering capability.
b) When a unit is ordered to dig in, the entrenchment level of the hex and the engineering capacity of all units in the hex is taken into consideration in determining how successful it will be
c) Units with engineering equipment can also be used to fix bridges and ford minor rivers.
d) The various Engineer unit icons have no special capabilities, but they help the PO identify which units to use for the above roles.

Is it possible to figure out about how deeply entrenched an enemy unit is?

If a hex is "spotted" then you can see the small "D", "E" or "F" on the right hand side of any enemy unit in that hex, and also the % entrenchment of the hex (this only affects the chance a unit has of digging in successfully, however, not its defensive strength).

If a hex is "observed" the only entrenchment information visible is the graphic showing the % entrenchment. IIRC the thresholds for these levels are 35% and 75%. So that gives a very vague idea of how well entrenched the defenders might be- but could be entirely misleading.
