Ok, I buy a commando platoon as the British. When I go to assign them as special forces in the editor I can only assogn the four squads, but not the platoon Bren LMG. Apologies if this has been raised before.

My guess is that the commando squads are classed as special forces but the Bren LMG is not. You can test this via oob editor. You could then create a new special forces lmg squad and replace the old one with it. (formation menu in the editor) Voriax

I thought that the "special" field on the unit decided whether a unit was special forces or not. The commando plt unit has a "special" value of 11. Does this not make the whole platoon a special forces unit, or does it just depend on the weapon class of each individual unit?

NO the unit must be classed "Special Forces" or "Partisan" to be able to infiltrate. The special code 1 designates a unit as a "recon" unit and 10 means it is "elite" (ie gets a +10 morale/experience bonus) Hopefully I don't have that backwards :-)
