If I play through the original Grand Campaign and the new Grand Campaign from CoI, will that cover all the maps/scenarios? Or is there anything else I'd have to play to get access to the rest?

Download and play some of the mods to play new campaigns with new maps and different challenges.

Of course. What I'm wondering though is whether I'll need to play other campaigns/scenarios in order to go through some maps that aren't covered by the 2 Grand Campaigns.

You will have played all the stock maps delivered with CoI.

To play with new maps, you will need to download them from somewhere.  The CoI Mods and Map Packs may be a good next step.

What Map(s) you play is dependant on the Battle/Operation/Campaign you are playing.  Just adding a new Map to your maps folder does not make it playable right away.  You will need at least a prepared Battle or make your own in the Scenario Creator.

I can recommend the western front mod for COI very enjoyable campaign to play.

Where could I find the Western Front Mod?  Is it playable from both sides?

Play the new CoI campaign. It is an all new hand made one by Misfit with all new maps.

Spoiler for the very first battle in the new CoI campaign. Watch out for the arty whatever side you play.
