Is it possible to start a 1 player game as one side then switch? For example could one start the grand campaign as the Japanese then switch to the allies, say, in May 42?

Playing against AI you can switch each turn. You can even switch to Computer vs Computer if you like.

So the AI will take over Japanese production then too? (I don't have the game yet if it isn't obvious.)

As others have said, yes.

Bored, in April 1943 as Allies, I swapped into Japanese shoes for a week, just long enough to march boldly into the USSR, start the fun, then go back to being the Allies. While I was away the AI had formed literally hundreds of Transport convoys going hither and yon, and they remain under Computer control once the sides are swapped back. Couple of months later now and I've almost got everybody back where I want them.

And the Rooskies are charging south and west.
