I can't answer the entrench question, was too lazy so far to read the manual deeply and do some testing. But your other question i can answer i think. First and most important, tanks have good attack values but bad defense values. A medium tank e.g. has 1800 attack points vs. armor but only 1200 defense points. Vs. infantry it is even worse, 750 attack, 370 defense. So tanks are very vulnerable to counterattacks. Riflemen have the same attack and defense values, expect vs. other infantry, there they have only 13 attack but 26 defend. So if you can afford it Tanks + Mot Inf would be excellent. I would try to build such forces: 4 tanks + 20 Inf = 60 Stack points. They are for the offensive. Optionally you can mix in a few mortars. The infantry tend to soak up some damage and thus your tanks live longer. And then mot inf to defend the tanks, there something like that would be good imho: 40 Inf + 2 At Guns + 2 Flak + 4 Trucks. They have the same speed as the tanks. Use them not for conquest, but to protect your tanks from enemy counterattacks. If you are the defender, it is easier, this way you can simply use lots of infantry, not mobilized. Then you can do local counterstrikes with your Tanks or the infantry if the enemy has isolated Tanks. Air superiority is also key because tanks and trucks are so vulnerable to Bombers. So if your enemy has Air superiority and lots of Artillery he can methodically destroy your forces hex after hex. This is a very slow process, but imho often effective, at least as long as speed is not key.
