I've read that transport aircraft can, well you know, transport stuff from one airport/City to another. How does one do that? I see no buttons on either the plane or potential passenger to accomplish that activity.

Select a transport plane, then select the "parachute" button as if you were going to para-drop. Select the unit you want to transport. When the dialog comes up asking "Do you want to paradrop?" click no. Now you can select a friendly airlanding site to transport the unit to.
