I did the in game tutorial mission and all of the training scenarios to various degrees but is there really a best way to learn how to play this?

In some respects I feel a little lost at times.

Read the AAR's to get a gist how the game works.

The academy for pacifists is also a good read.http://www.matrixgames.com/forums/tm.asp?m=1802416

Plus all that you want to know just ask here in the forum. You'll find all the help you need.

Learning by doing. Is also one way to learn.

I'd play one of the scenarios where you dont have to deal with prodcution. N Africa, or Ardennes maybe. Then work up to managing production and supply.

Play a small 20x20 size random map against one AI.
Here you can learn the basics + things like building roads.

For example as far as product goes how do you know what is "enoug" supply?

I get the basics of warfare down (supply is king, don't get cut off from the line, etc.) how sometimes when an attack looks like it should be successful it won't be. I know the vagaries of battle and whatnot but it seems like defends almost always have an advantage.

You can find out how much supply your HQs want by clicking on the HQ's name in the production overview screen. You should probably produce a bit more than that because that was last turn's demand.

Well-entrenched defenders are tough to get rid of with squishy units like infantry and mortars, try and get around these positions and cut them off or use artillery/naval gunfire/dive bombers to take away some of that readiness and get rid of some of the defenders. Also, enclaves with cities can only be put out of supply by cutting them off from the sea(if coastal) and shelling the city involved, otherwise the city will produce supply so long as the opponent has an HQ there to receive the production.
