Was having lunch and talking to one of the owners of Los Golondrinos in So Cal about mole. They make their own, and use the usuals, chocolate, poblano, ancho, pasilla, mulatto chiles, but there was always something really tweaky and good about their mole, and then he told me. Banana. They put a skoosh of red Guatamala bananas into the mix. Ahhh .. some interesting sweetness from somewhere out of left field. For all you real mole fans out there give it a try. Can’t be ripe, gotta be semi-ripe and should be a red banana, not a yellow Cavendish, banana. You will absolutely love it!
