Seems like my guys wont stay deployed after unloading them on a hostile island. In one turn they unload and then reload cant figure this out.

Only time I've seen something remotely to this has been they were getting their a** handed to them & had to evacuate. Not sure if this is your problem or not. Are you seeing a bad combat result during the turn they unload?

Sounds like their preparation for the target is less than 100%.  It's particularly critical for amphibious invasions and without it troops take severe disruption and disablements when they land.

Sometimes had this happen when trying to launch an invasion using xAP's due to lack of AP's. If the garrison turns out to be larger than you assumed, then the few troops that trickle ashore tend to have second thoughts and leg it back to the lifeboats without further ado.

look in the bottom right corner of an LCUs screen

there is a planning button with a percentage number.
to pick a different location click on the button and mouse on the map for your objective.

LCUs will generally add 1 or 2 points per day. when they reach 100
prep, then going on rest/training will ,over time, up the experience of the unit to national max.

AP's and APA's are naval vessels designed for troop transport and amphibious assualts respectively. xAP's are civil-type passenger ships chiefly useful for dumping troops ashore at friendly ports. They can be used for amphibious ops if you're desperate, but get no amphib or unload bonuses. Trying to use them for a landing against any useful opposition will normally result in a very rapid reload-and-bug-out.

it is a long war. as allied you have some APs and AKs they are big and fast. the drawback to them is their very size.

pre '43 you cannot make large amphibious invasions using only APs and AKs ,so you must add non amphib ships to the TFs.

look for small fast xAPs, xAKs and AMCs and use lots of them lightly loaded along with the APs and AKs.
{note some AMCs have no cargo capacity.}

try for 3 times your LCUs load cost but don't fill the rest of the capacity with supply. this leads to long unload waits. send supply and support LCUs in separate TFs as follow up TFs.
