Is the AI sufficient to play at a "beer and pretzels" level without offending a real person?

Playing a 7 player pbem may be more than I can undertake at this point due to work commitments (not fair to my fellow players to be absent for a week).

All I need is something that avoids silly moves - I can attribute any other moves to "style".

Although there have been some AI fixes in recent versions and it's better than it was initially, for veteran players it still doesn't rise to a 'decent' level. The AI still needs work and that's the plan for the next v1.09 patch. This AI will not likely ever rise to a 'brilliant' level but some things can certainly be done to avoid silly moves and be less stupid. That alone should result in more challenging gameplay.

A few of us are still waiting to hear from Marshall about the plan going forward, so I'm not quite sure what else to say regarding what to expect and when.

Beer and pretzel? Sure, why not, it's playable certainly for beer and pretzel. If you are looking for a real "challenge", no.

I would say the heavier you load up on the "Beer" portion of your proposed diet, the more challenging the AI will become. At least a 12-pack to become remotely challenged.
