When the AI handles my fleets, it creates Strikeforces. Is there any way I can do this, too?

well.. there's no actual difference between a strike force and a fleet.
The AI just names them that way so you know what he'll use them for.
Strike fleets will usually go for mines and easier stuff as they're always composed only of few ships.
And fleets are big and can go do anything, even against space ports.

When you control manually, you already know what you want to use your fleets for.

1. This is a gameplay question, you should ask at the general forum.

2. like mSterian said, there is no different, just a different name.
You should set your favoured attack fleets/ships to a hotkey, thats your personal strikefleets then. Don't forget them not to set them on automated ! :-)

Personaly i have key 1-4 for my attack fleets, 5-7 for Troop Transport ships/fleets and 9-0 for some Constr. ships.

1. do you see on top "All Forums >> [New Releases from Matrix Games] >> Distant Worlds Series >> Tech Support >>" ?
just click at Distant world series to enter the general forum.

2. like you keybind units/formations at most other RTS games, CTRL + number.

Just discovered that there is the possibility to name fleets! That's pretty cool and exactly what I searched for.

You can rename any Design,Ship,Fleet,Colony or base.
You just need to open the Ship/fleet window or double click at the name to open the Ship/fleet window with this object/fleet.
