I played around with the database editor by adding/removing weapons to a ship. When I later selected the ship the changes were not present in that units description.

Shouldn't the unit description change if I make a change in the editor (only in my saved scenario)?

No, the database viewer always lists a platform's stock configuration. Any overrides you do to a unit apply to that unit alone.
