What does sentry mode on land units and sea units mean? And also when you move into a sea area there is a list of check able things like air units only or convoys only Ect.?

Sentry mode for convoys means they won't return to base. I think sentry mode for land units means they will be skipped when you use the arrow buttons to go to the next unmoved unit.

Are the checkboxes you refer to in the Naval Review Details? If so they are only filters for what you are trying to view.
