Are there any known differences on how the AI assigns missions to ships? Is a capital ship as likely as an escort to get assigned to patrolling the ass end of nowhere or escorting a small freighter full of Helium?

I think I've seen frigates on escort duty, which is why I'm wondering.

I believe anything can be on "escort duty"; it's the default behavior for automated military vessels. However, Escort-class ships are never put into fleets by the fleet formation AI and are probably preferentially put on escort duty.

additionally, Carriers are set to Evade rather than the empire military tactic, while Capital Ships are automatically scaled up by the design AI based on the empire's maximum construction size.

Troop Transports have a special AI when automated where they load troops from colonies with spare troops and sometimes shuttle troops around. If fleet formation AI is on, full transports will be placed into fleets and empty ones taken out.

Single AI ships should be given missions where "higher class" ships gets the more valuable jobs. So an automated capital ship ought to be put to patrol a colony or important gas mine, rather than escorting a freighter with 212 helium.

Not running single, automated, ships, I have not paid much attention to this myself.

I did write about this recently. The role is mainly used to determine if the ship will be put into a fleet, strike fleet or be used as a solo ship. Escorts are weighted towards escort duty and not being in fleets. A capital ship will more likely be placed in a fleet, but if not it will likely be used to patrol colonies, planets marked for colonization and ports.

So yeah frigates do get assigned escort duty but they favor patrol duties around stations. They also get placed into strike fleets and to a less extent fleets.
