If I specify more air drops in support of amphibious landings than my transport capacity can handle what happens? Does the computer choose randomly amongst those units that have the required prep points to air drop until the capacity is used up?

you have a limited number of transport aircraft assigned to the airbase for your airlift

or perhaps im missing something too

That's not really what I'm looking for. The "problem" is that air drops that support amphibious landings happen during the enemy players turn so you cannot tell which unit to air drop. Just wondering how that situation is handled.

I far as I can work out you specify that drops and units in your phase

then its in the lap of the gods

Yep, but if you have specified more units than you have capacity for then which units get dropped and which do not. I'm pretty certain it is random, but just wanted to know if someone has tested it out.

as you select the units to drop they use up transport aircraft
once you run out you cant launch the drop even though you've planned it

In the Med., unless you transfer planes from England, you can only handle about one division and one regiment for drops. And yes, when you run out of transports before you get to lift capacity for the unit the drop will not happen. When you plan invasions, check your total lift capacity in the area, versus how much the unit requires to be lifted. Also putting your airborne units to be dropped into the same hex as the transports saves on mileage for the drop. So a close drop with all your aircraft at the base needed to drop the unit(s), and the unit(s) on the base itself (which is not a requirement they just have to be on an airbase in range of the transports), you might be able to squeeze two divisions in.
