Hi... is there anything I can do to evade incoming missiles besides looking on helplessly, crossing my fingers and hoping for the best as the missiles homed in on my aircraft and ships? Thanks!

How to evade missiles:

Step one: don't get detected.
Step two: do not let the enemy get in range to fire them.
Step three: If fired upon as an AC, RUN AWAY AT FULL SPEED!!
Step four: If fired upon as ship, start praying and manually allocate A LOT of defense missiles to all incoming targets.(Especially older ship have the tendency to be a bit to conservative with its missiles and thus can be overwhelmed a bit more easier then needs to be).

Also older Semi-active radar homing SAM missiles can be evaded by diving below the radar horizon and thus make them loose lock on.

That's about it.

Also for older SARH missiles - shoot the Shooter - he may break the radar lock, and if you kill him all the better.

Along with all of the above - If your ship/aircraft/group have any jammers ..... switch them on!

Sorry AL, but jammers don't really defend against incoming ASM missiles.. In theory they should, but only the very oldest missiles in game are effected by jamming as the rest have a Home on Jam mechanics.
Air to air jamming is also a bit iffy, I have only seen an effect on the extremely long range missiles like AA-13 arrow, but this was more linked to the parent planes guidance radar getting jammed while the missile is in mid flight. Jamming will more likely cause the parent plane not to fire then the fired missile to miss.
