Is there a reason I should NOT have a unit dig in if it can?

Example: I'm attacking, moving reserves forward, reaching the end of the turn. A unit has moved as far as I desire it to move and has the ability to dig in. Is there any reason I should not do so?

Only if you're planning to leave it mobile on tactical/local reserve; something that's rarely a good idea.

not sure about this, but if youre on the offensive and you leave them mobile against an enemy theres a bigger chance they cant retreat and end up disrupted and they cant move the next turn, which makes it easier to surround them

a dugin unit will retreat even with 0 move left, leaving them mobile makes it more likely they retreat, and evne if not reorged in the initial retreat then get overun a second time now at minimize losses and are even more likely to end up reorging
or routed.
