I think the scenario Ruby Slipper had a bit of action between Russian and Chinese forces, though the focus of the scenario was Russia/DPRK. Not sure if there are any others though, apart from watching the AI beat each other up in Reds from Chains of War, that is.

There is one in community scenario pack

The Bear And The Dragon, 2023: Relations have broken down between China and Russia, and now a Chinese amphibious task force moves to capture Vladivostok. But they will have to run a gauntlet of Russian submarines and bombers to do so.

The Bear and the Dragon, in the community pack, is exactly what you're looking for.

Manage the transit of a Chinese Amphibious group along with her escorts, through the Korea Strait up to Vladivostok, while running a gauntlet of modern(ish) russian subs and missiles.

As for the aforementioned The Ruby Slip, while it is presented as Russia vs DPRK and with careful management can remain so, it's fully prepared to escalate into a shooting war with the Chinese if you get sloppy. So I think it can somewhat qualify for your request.
