Been trying to find time to play and at last I have a bit of it. What is the best way to learn as this is my first game of the series ?

I Would strongly suggest reading the manual and the guide. After this, you should play it and learn the old classic way, do it. Axis is better for this, as more active and a bit more concentrated. If you want a simpler run, you can give two of the three a nation to the AI, and play only as Germany or Japan, the later would be better, since it has lots of naval part and invasion too, but also a bit less known and clear, what you need to do, the German first two year is quite clear from history.

You can assign nations on the side you play for the AI don't know if you can assign all nation, but keeping italy on the axis side or india on the allies side will not do much trouble, and you can still do some fight and learn yourself. But this means you only see them move and fight, not much from the production or research (you can check what they choose) and only the results of the events, not even the test and choices for them.

I suggest watching some YouTube's. Here's one from around launch but you can search for others:

If you press F3 while you're on the Main screen, i.e. before selecting single player, then you can set the AI to play itself, and sit back and watch.
