Is there somewhere an armor-piercing table, to check fast what armor/guns pierce or is pierce resistant against the other part?

It is mostly a mater of Weapon MM vs Armor MM, with some items having a virtual armor and penetration thickness.
However what you are asking for might be more "5.12.3.5. weaPon tyPes versus armor tyPes matrIx"

The armor penetration system its very simple and binary: You either pen it or not, if the enemy has 100mm armor and you have a 105 mm gun, you pen it, if you have a 60mm gun you don't and you suffer an attack penalty, now, normally you always want to have a bigger gun than the enemy armor, or its HP its going to be too high for your attack and you will hardly roll any hits, so in reality there is no need for a "armor piercing table".

As a rule of the thumb, if your attack score its close or higher than the enemy HP, then it can pen it and lastly RPGs pen between 100-200mm
