When hovering pointer over the hex window to the right of screen it has Organic Supply near the bottom of list of variables. What is this for? farming potential or perhaps units can for a limited time get food from that hex if out of food?

Organic (as in integrated) supply is units' capability fetch supply from some distance away, so they don't have to stand directly on a road or railroad to draw supply from it. It uses AP for range calculations, like truck/train logistics. You can see the range inside which units are able to use organic logistics if you toggle on 'Show Op. Log' under the map layers panel of the right-side bar.

Okay so this number will change based on type of terrain no doubt. I haven't really noticed that variable before. But i do have operational range layer on all the time.

Truck and Rail logistics flows on Roads and Rail lines - full stop.
They never go offroad.

Every single hex where you got supply but that is not on a (used) road? That is Organic or Operational Supply!

Without organic supply, units would be entirely unuseable/tied to walk on roads.
