I have a question about the altitude the aircraft execute the mission at. I would assume a level bomber executes a strat mission at the level you set for the mission: so if the mission altitude for bombing railyards is 25k then you drop the bombs at 25k. The same would hold true for recon missions.

But at what altitude does ground support or the various ground attack missions take place?
Is there a way to find out without testing?

Actually RECON missions change altitude in the target hex to maximize the efficiency of the cameras they carry.

Ground Attack missions will execute at the altitude given UNLESS they are dive bombers. Then they will dive down to execute their attacks at 1000 if they start at an altitude of 8000+. Fighters and Fighter/bombers will also dive down to 1000 and execute strafing attacks once they have dropped their bombs.
