The way I would do it is this:
If you have Infantry with your tank, use that infantry to take out the AT unit first and then use your tank to destroy or suppress the enemy infantry.
If you only have a tank, check the distance to the AT unit. If he has a reasonable chance to hit your tank with opportunity fire then cover your tank and retreat. If he doesn't, then destroy or suppress that unit first.
Remember that if you use your tank to fire on an AT unit, he will probably get a chance for opportunity fire against you and if he has a reasonable chance to kill your tank, he probably will. The same is true if you fire on the infantry unit with your tank - the AT unit will probably get a chance to use opportunity fire on you tank, again with a chance of killing your tank. I usually make a habit of using my Infantry to take out the enemy's AT units and using my armour to take out his other infantry. The other point is that if it is at all possible, use artillery to suppress the enemy's infantry and AT units - small mortars, infantry guns, AA guns, and AT guns firing HE are especially useful here.
