I can think of some interesting death scenes in "Lust in the Dust" with Devine and Tab Hunter (if you know what I'm talking about)

Stellan Skaarsgard's (sp?) character in Hunt for Red October and Mickey Rooney getting whacked in Bridges Over Toko-Ri (its good any time he dies in a film and not because of the acting).

Rade Serbedgia, as Boris the Blade (aka Boris the Bullet-dodger), in "Snatch"... Vinnie Jones (Bullet Tooth Tony) empties a full Desert Eagle load on him, while Boris bleeding on the ground keeps teasing him...

Great movie!
