Will putting more construction bays and docking bays on construction ships make them construct faster? What does each component do for the coinstruction ship?

Assuming you have all the resources onboard that you need, the construction speed is determined by the Plants (three types) and ultimately the Construction Yard speed.

Construction Yard speed progresses with Tech upgrades, and is probably the primary determining factor.

The construction speed is for a single construction yard, so if you're only building one item (as is always the case with construction ships) then adding more construction yards will not help you. As Spacecadet explained, you should upgrade you construction tech to increase the speed at which your yards build items.

Is there a way to have a ship build another ship (Moving space factory, like in Space Empire serie)

Not afaik Nibelung44 (apart from fighters). If you open the ships and bases screen and go to the construction yards tab of a construction ship the drop down menu is disabled.
