If he gets injured during a match then no substitution, he'll get the points he's earned up to his leaving the match. So if it's 10 seconds after kick-off then he'll earn one point. As far as your team goes, I think there's some promise in there. Mertesacker should earn some points, despite Arsenal's reputation to the contrary they were quite good defensively last season. Jagielka is a risk IMO, Martinez (the new Everton manager) has not managed to build any sort of defence with Wigan which culminated in their relegation last season. Picking any Everton defender could be a gamble, which is why I left Baines out of the team. Of course, he could pull it off and I'll be left looking daft. The only other 'maybe' player is Johnson IMO, he's capable of good games but he runs hot and cold. He just doesn't seem to be able to knuckle down and perform every week.
