Unfortunately I don't have a savegame to illustrate this, but I'll post it in case it helps.

I had my view locked on a small automated fleet of mine that was patrolling a mining station. It then switched its mission to "Attacking XXXXXX" where XXXXXX was a pirate ship elsewhere in the same system. The fleet entered hyperspace, moved to another mining station in the same system, but then slingshotted 180-degrees while staying in hyperspace, and proceeded to my colony in the system where it then dropped from hyperspace and engaged the target.

I'm not sure if the pirate ship was originally at the second mining station and moved to my colony while my own fleet was in hyperspace or what exactly happened.

Or can fleets in hyperspace now change their destination without dropping out of hyperspace and re-initiating a jump?

They can. It's readily apparent if you tell one of your ships/fleets to engage a target some distance away. If that target goes into hyperspace itself, you'll see your own ships constantly adjusting their destination to follow it, without dropping out of HS. It's definitely a life saver in the Ancient Galaxy scenario, since you can use it to get rid of planet destroyers.

Yeah, now that I think of it, I've always seen them tracking moving targets. I guess in this particular instance it happened to just time out perfectly that the target entered hyperspace a split second before my ships dropped out of hyperspace, so they slingshotted after it.
