It look like gun only armed fighter intercepting bomber with defensive armament cannot use guns effectively.
Here is sample scen - Voodoo is trying to stay out of range of Bear defensive guns and is firing, I guess, from beyond DLZ. If it do not splash bomber with first shot (with is in range probably due to high approach speed) it is expending rest of ammo ineffectively. I do not even dare to guess what AI is up to after expending ammo...

Checking this with B568.

The Voodoo creeps up behind the Bear, matches speed (to avoid overshooting) and keeps shooting until it destroys it or runs out of ammo.

The abnormal behavior you witnessed after it ran out of ammo is because you did not add any airfield. If you had, you would observe it RTBing immediately once out of ammo.
