[image]local://upfiles/35791/FBE4506C84674E18A36AAFF7B0731F5F.jpg[/image] If you cook the bird between 425 to 450 F or 218 to 232 C for an hour then cover it in foil and turn the heat down to 350 F or 176 C to finish cooking, the skin will be nice and crispy. If you cook it breast side down on a rack, the juices will flow into the breast and that will tend to make it juicer. Don't stuff the bird, instead have dressing catching some of the pan drippings so reduce the fat for the dressing. You can always add butter to the dressing later. If you need pan drippings for gravy, put a small pan right under the bird to catch some then make the gravy while the bird is "resting" after its ordeal in the oven . . .
