Been a while since I played CC but I know the game well.

For the Grand Campaign re the line/veteran settings..

What settings would you suggest for an experienced player for each side...when playing as allies and as Germans?....I hate to start a campaign and get deep in and realize I could have set up a better game at the begining

For experienced players, I recommend the veteran settings. You will have less forces, but they will tend to be more accurate in combat.

Right assuming both are set to "line"....this is relatively historically accurate.....but as the AI isn't perfect and you need more of a challenge...so if I am allies and I set allies to veteran,,,the allies will have slightly less forces than historical norms correct?.

So if I wanted the enemy...the Germans to be stronger force and present more of a challenge than "line"....would I set them to veteran or green?

Correct. If the allies are set to veteran then they will have fewer forces than in history, but they will be more proficient than their historical counterparts. Setting the Germans to line would give them a numeric advantage over the allies, which initially may not seem challenging, but will be as the campaign goes on.
A tip if you haven't considered it is to set the battle time to 20 minutes or less.
