The replacements are an abstraction that represents off-map factories, imports or whatever. The production value reflects on-map factories. If the airframe has an upgrade, the factory will upgrade by default according to the availability schedule. The successor airframe then will normally receive new planes from three sources: off-map replacements, on-map factories that had been producing the prior model and upgraded, and on-map factories designated for the current model. E.g. the P-51H in the stock scenarios will normally have 162 replacements per month plus 90 production from the upgraded on-map P-51D factory in Los Angeles plus 130 production from the P-51H factory in Los Angeles.
