Hi folks, the mountain units often had special gear like lighter artillery pieces and stuff needed for climbing. I am not sure they differed much in the ability to dig though. My understanding is, that trenches were made with wood, barbwire and shovels sometimes adding sandbags ? Heavier trenches with bunkers needed special units to build them. Cavalry was used as fast moving infantry dismounting before an engagement. There were some charges on horseback, but they were rather the exception. Based on the information i have i would say mountain and cavalry units could get to the same entrenchment levels as standard infantry. If you have different information let me know, i am eager to learn.
