It comes down to achieving things like 'stop them at the Vistula', or the Oder, or keep them out of Berlin. Advances are fun, retreats are not. It's down to finding goals within a losing framework and attempting to achieve them. For some this will be satisfying, for others, not so much. I think most players 'deal with it' by starting a new game.
