Does it just disappear? I know that other citizen types purchase goods from the market. First food to live, then other resources which they convert into luxury goods to improve their QoL (which helps equalize the global price of commodities.) And I know that at least private citizens can invest in producing private assets (not sure if workers can too). Both of these are pretty useful economic activities.

But what about soldiers? When money goes to them, does it just evaporate? Or do they buy things? Do they save up and spend it when/if they turn back into civilians? What about when they die? I assume the game doesn't represent their money getting inherited by their civilian family.

Soldiers buy resources from the private economy, manual doesn't state what those resources are so perhaps Naselus is correct.

Back in the day, just outside of the main US shopping center in Heidelberg, there was a very fine establishment known as Suzie's. A very popular place! [8D]

Actually hung around a place called Black und White in Kirchheim..I vaguely remember Suzies among other establishments.
