Can someone please explain the significance of unit size such as brigade versus theater.

Is that that there are more units to offset attrition such as number of tanks available for the different sizes?

Unit size is just for show. There is no effect on the game other than that the smallest size makes the unit indivisible.

I see. So a Division size unit can be broken down into several smaller units that can each be assigned different tasks?

Provided that division sized unit isn't itself a subunit (from a Corps being broken down).

Unit type can prevent subdivision. For example, HQs can't be subdivided - and those sizes are most often found on HQs.
