In the various tables accessible in the game, some units appear with a star as a suffix. I have not been able to find any explanation in the manual on the meaning of these stars.
in the descriptions of the air groups some quantities appear normal, others greyed out.
Any indication of the meaning of these stars and grey text would be welcome.

Pictures would be useful.

Take this with a grain of salt, as I am not sure myself, but I believe that the star denotes the fact that the airgroup can be withdrawn on its removal date,
while no star means it must be disbanded. Note that from what I have seen you can still withdraw the no star groups if their removal date is far enough away
from their withdrawal return date.

For LCUs, I believe the star denotes a unit that is part of a larger unit. Click on the "Unit Composition" in the lower left of the unit screen to see what it combines with. You need to get all parts of the larger unit in the same hex, with the same HQ and with the same devices in each of the weapon slots before they will combine. After combining, division sized units can be divided again into A/B/C units that can then take replacements more rapidly than the whole unit.

Greyed out text usually denotes a device that is no longer being produced or not yet being produced.

I took a quick look at the Allied air units coming in and the ones with a star appeared to come in at a base that does not belong to their HQ nor their higher HQ. Noting definitive because there was no picture to reference.

"Unit Organisation"

Although it's misspelt in the game screens.

Escort* - may indicate you have a % of those fighters providing CAP.

The greyed out airframe numbers may mean that those groups are "replacements delayed". If you mouse over those words in the group screen, a pop up text box indicates the time in days before they can take more replacements.

See pages 255-256 of the manual- A maximum of 12 planes will be added to a group as replacements every 7 days.
