How does one capture enemy supply?

I have played several detailed battles now and in each I have been able to have my cavelry get to the enemy's supply wagons. Each time they get within one hex I try to capture their supply as I've read about the AI doing the same thing to players in another post. However, when I do, the game only lets me attack the supply (crossed sabers) or charge.

Is there a way to order your cavelry to capture instead of attack enemy supply?

To capture it, you need to not only charge it, but have a very good charge result. Same as for artillery.

Hummmm? I usually do around 1,000 casualties to them. It must requrie super cav.

I think you just have to displace it, if it gets displaced, it changes sides

Once it changes sides, can you use it for supplying your own troops like you gain the guns of an artillery unit, or does it just become another pow?

I have never been able to use captured supply as it usually routs off the map. I assume though that you should be able to use it if you can rally it.

Does it route off of the map automatically or did you have control of it's movement during its turn? Also, when you refer to rallying the unit are you talking about skipping its turn so it is no longer shaken and fatigued?

I refer to rally as when a unit is routing and stops with the ability to change formation.
Routing is when the unit moves automatically toward the map edge. A routed unit can rally, thus stopping the auto move, but still be disordered. In the disordered but not routing state you can move and attempt formation changes.

In regard to supply I have seen supply stop routing on rare occasions, but have been unsuccesful on those occasions to overcome the disordered state.

Ok, I will have to continue to mess around with this to see what I can do.

Also, I have just had a battle against Austria (I'm France and their trying to siege one of my provences) where I had no supply wagons of my own. It made for a very long battle because I would have to wait turn my units for many turns in a village hex in order to resupply them. The battle took 8 days before Austria began to weaken and the battle ended in the afternoon of the 9th day of battle.

What did I do wrong that there were no supply wagons in this battle?

The target (supply or artillery) has to be displaced and then a separate check is made to see whether it is captured or no.

The upgrade Cavalry Ferocity helps cavalry displace units, the precondition for capturing them. The base chance of capturing is about 20%. Also the attacker needs to have a minimum strength of 3,500 in order to capture a unit.

8 days!! ...you should have taken the bayonet to them

In order to get "supply units" you need to ensure that the province/army is in supply. In your example above I think a depot in one of your neighbouring provinces should do the trick, unless the weather is bad. OR, IIRC you can get an upgrade which I think always gives an extra supply unit, (ie 1 instead of none - but you really need to double check this, I do not have access to the game at the moment) and during detailed combat I have been able to use captured enemy supply units to resupply my own units.
