Ahhhhh.......while shopping today I spied Gemfish at the fish shop selling for $12 a kilo Rushed over and purchased said fish and am now sitting here drooling at the thought of Gemfish for dinner. MMMmmmmmmm

Methinks that I will cook it simply. Dry the fish well and then lightly cover with a dusting of flour. Cut the fish into chuncky cubes and lightly fry in melted butter with dill and maybe a hint of garlic.

............serve with a baked spud (cut open to accept the sour cream and cheese) and maybe sme freash baby peas and chopped carrots with corn. A couple of slices of lemon...OOOoooo ....and maybe even lime to squeeze over the fish.
