The way I do it is to use an image host. Image Shack is a very widely used one (http://imageshack.us/). Upload the gif or jpg there and they will generate some "codes" for it. Copy the one for "Direct" and then add it to your sig inbetween "[image]" and "[/image]" without the quotation marks.
