Status: offline 		If I leave the patrol settings at the default 0 to 0, will the unit will patrol the entire 360 degrees?

Status: offline 		As best it can (if there aren't many planes, the coverage will be thin).   If you set a patrol arc the planes will patrol that arc better, which will give you a much better chance of detection in that direction.

Status: offline 		Also the arc is clockwise.  90 to 270 is lower part of the circle.  270 to 90 the upper.
