Is there any way of changing a player from eg Human to AI after you have started a game?

Yes, in the Game Options just change the Computer Controlled box to the side you want then end your turn. You should also change the Game Resolution to zero before you end your turn too.

If you made any Custom changes to Morale, Fort Level, etc. you should change those too before you end your turn.

I'm pretty sure that's all you need to do.
