I'm struggling a bit with these guys.

If I don't mess with production priorities (ie 100%) I end up producing almost as many planes pr turn than the entire Italian air force has active on the eastern front. Furthermore, I don't really see any obvious way to use the italians tactically.

So currently, my best plan leave the productions as is (due to AP cost of changing it) and then use the italians for attacking Soviet airfields or fighter sweeps (by setting one of my fighter bombers to "Bomber" mode).

Any comments or suggestions?

Only 20% of Italian production goes east. I use their airforce strictly to support Italian ground troops (GS missions are flown only in support of the same nationality, unless the air group is German).

Italian fast division is OK, as is cavalry and mountain troops.
Other divisions are a bit weak, I use them as garrisons, but only because I need to garrison certain places and there is always not enough divisions to do it.
But of course Hungarians and Rumanians are much better to put on the front (3x3 is a bit better than a lone German inf div).

Then there is something I don't understand about the pools.

Currently I have A LOT of italian aircraft in my pools (about three or four times the number on active rotation).

Granted, I haven't been particularly active with these units, but that's still quite a lot of aircraft to have sitting by in the fall/winter of 1941.

Is that what really happened ? Where did the rest go ? Siege of Malta ? North Africa ?

Maybe they're not flying, and without losses to replace, the pools are growing?
