So here’s New Year’s Eve and Southrons have a traditional NYE dinner: ham steak with black-eyed peas and greens (collards or mustards). For the greens, take two big compressed handfuls and put them in a pot (none of this finger handful stuff). Cook up a bit of bacon (thicker the better) till almost done (wiggly, not crispy), and slice up about ¼ cup of ham steak, garlic, cardamom. Add all that and sauté. You will end up with some righteous greens and some wonderful liquid in the pot. We call it pot-likker and it’s seriously good. Then slice up a bit more ham steak for the black-eyed peas, Boil them up and dial them in and get them righteous. Tasty, tasty, tasty, and heart friendly, too, if ya do it right.
