The info you want IS in the manual, in the charts for port loading and unloading. They tell you how much ship tonnage (not load capacity) can be docked, the unload rates for docked vs undocked and cargo/transport vs amphibious. For very small ports, amphib unloading is faster than docking the ship, except for large items like engineering vehicles. The game abstracts having lighters available at the port to transfer things that are too heavy for the dock, but larger ports have more and larger lighters to help with such things, and sturdier docks for unloading. There are also ammo reloading tables showing what capacity you need in an AE or AKE to load ammo for a given gun, or to handle depth charges, mines and torpedoes and bombs. Ammo ships can handle all types of ordnance within their capacity. Specialized ships like AS and AD and AG handle ordnance specific to subs, DDs and smaller craft respectively. Those specialized ships also help with minor repairs of their respective warship types. There are charts in the manual showing what support ships are for which combat types.
