It depends upon the terrain. While you probably don't have time to dig in, cover and tamp a mine you could throw some leaves over it. One issue is not that you don't have time to bury them, but if you do bury them, you have to take the time to plot the minefield then you need to unbury them when you move on. Engineers carry a basic load of mines and can emplace them in a hasty minefield as is done in the game during turns. Hasty minefields are meant to protect units temporarily. They may be extended into a permenant mine fields but more probably are just laid out in front of a unit for its temporary protection then recovered for reuse later when they move on.
