Hm, I think that one's pretty much check every asteroid.  For systems, if you click on the system when zoomed out you can get a summary of all resources in the system.      Note that the expansion planner helps you filter and search and sort all this information to find out what resources you need, where they are located and queue up your construction or colonization ships to build mines or colonies at those locations.
