IIRC, no production will be added to the owning nations stocks from occupied provinces. Should your opponent surrender and you claim an occupied province in the peace, then it will be yours to manage. All its production also is added to your national stocks. Watch out for adding too many provinces. Waste can become ugly. BTW, welcome to this neck of the woods.
