The lamb is usually in a yogurt/lemon juice base, but the beans are cooked with sweet onion, sweet peppers and cumin. An interresting juxtaposition of flavors. Traditionally, it’s cooked with linguisa and ham hocks, but you can dump the lamb bone in there and some ham and get pretty righteous. Gotta do it with Indian Basmati rice as a bed and with a garnish of greens sauteed in a balsamic vinaigrette. Woof !! So then, lamb, lamb, beans, lamb, beans, lamb, beans, and then whatever’s left over before we hit the soft-shell crabs and another round of chicken teriyaki and veggie tempura.
